With that, Delia Smith has been giving us amazing Christmas recipes for decades, and this ingredient she uses for her potatoes is one you should be using too.
Roast potatoes have to be one of the best parts of a roast dinner, and the crispier they are, the better. That’s why it’s essential to add a little drippings or lard to serve the best roasts this Christmas.
Delia Smith’s recipe is super simple. All you need are potatoes, salt and the special runny ingredient or lard. Starting with a preheating oven to 200°C or thermostat 6, you will place your roasting tray with the fat in it on the highest part of the oven.
To prepare the potatoes, peel them finely using a peeler and cut them in half. Then you put them in a steamer set over a large pot of boiling water, sprinkle them with salt, then put the lid on and let the potatoes cook over low heat for about 10 minutes.
Once they are ready to go, drain the water, put the lid back on and make sure your hand is protected using an oven mitt or cloth, you want to hold the lid firmly and shake the pan well. This part is essential so that the cooked edges of the potato are nice and soft.
Keeping your hands protected, remove the hot baking tray from the oven and transfer it to direct medium heat on the hob. Using a long-handled spoon, quickly dip the potatoes into the sizzling fat, turning several times so they are evenly coated. .
Then you will need to put this tray back in the oven for about 50 minutes to an hour or until it is golden brown.
Once they are ready, sprinkle them with a little crushed salt and serve immediately to make the Christmas party crunchy.
